Makes enough for 10 people

For the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Premix (makes 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

Making the Syrup: Put all the ingredients into a saucepan, bring to a light boil, agitating so the sugar melts. After that, remove from the heat and leave to reach room temperature entirely. Decant into a sterilised bottle, close it and refrigerate it in the fridge, it will last for around a month.

Preparing the Batch Mix: Mix the specified liquids into a big jug, allow it to infuse for one hour, then pass it through preferably using a fine cloth, making it fully clarified.

When ready to serve: Pour 85ml of your batch mix into a cocktail shaker filled with ice, gently stirring lightly for about 60 seconds to cool it down. Strain into a cold coupe glass or similar, garnish with some cranberries and finish with a light spray with the mandarin essence over the top.
